You didn't get what's "soft take-over". The second value (the ghost one) is shown so that you know how your controller and the software are out of sync. Make the ghost reach the normal value and then your knob is back to business, as Cross ensure it won't jump when turning it.

As Daniel told you, you can disable "take-over" on user mappings.
Here you are trying to modify a built-in (read-only) mapping.
Duplicate it using the [x2] button and then you'll be able to make any changes you want, take-over included.
